#SCGS Sweet & Sticky Lazy-Aged Steak

Ingredients

300 g lazy-aged Steak
1 tsp salt
1 medium sheet caul/lace fat
3 pieces of Kitchen twine
2 Tbsp Seven Colours Grill SeasoningTM 
1 tsp Black pepper
3 Tbsp Oil
½ cup Sweet and sticky sauce
1 Tbsp Worcestershire sauce
1 tsp Lemon juice
10 Baby potatoes
1 tsp Paprika
1 tsp Mixed herbs
1 tsp Black peppercorns
1 tsp Chilli flakes

Method

Preheat oven to 180 °C.
Season the steak with salt, then wrap it tightly on a sheet of caul fat. Tie the roll securely in three places with kitchen twine. Season with 1 Tbsp Seven Colours Grill SeasoningTM and the black pepper. Add 1 Tbsp oil to a large pan over medium-high heat and add the steak. Sear both sides for 2-3 minutes.
Transfer the steak to an ovenproof pan and roast for 15 minutes.
In a bowl, whisk together the sweet and sticky sauce, Worcestershire sauce and lemon juice. Remove the steak from the oven and baste it in the sauce, then roast for another 15 minutes. Transfer to a cutting board and let it rest for 1 minute before removing the twine.
Wash the potatoes thoroughly and pat dry, then cut each one in half.
In a large bowl, toss the potatoes with 2 Tbsp olive oil, paprika, mixed herbs, black peppercorns, chilli flakes and 1 Tbsp Seven Colours Grill Seasoning.
Arrange the potatoes in a single layer in the air-fryer basket and roast at 200 °C for 25-30 minutes – the potatoes should be fork-tender and crispy on the outside.
