#SCGS Roasted Carrots with Feta

Ingredients

1 kg Carrots
1 Tbsp (15 ml) Seven Colours Grill Seasoning™
2 Tbsp (30 ml) Olive oil
1 Tbsp (15 ml) Lemon juice
1 tsp (5 ml) Dijon mustard
1 tsp (5 ml) Honey
1 tsp (5 ml) Garlic, crushed
1 tsp (5 ml) Fresh dill
1 block of Feta cheese

Method

Preheat the oven to 200°C. Slice both ends off the carrots, then cut them diagonally into even pieces. Place the carrots in a large bowl and sprinkle with Seven Colours Grill Seasoning™.

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard and honey. Pour most of the mixture over the carrots, reserving a little to use later. Toss to coat. Add the garlic and fresh dill, then mix again until the carrots are evenly coated.

Spread the carrots out on a baking dish or tray in a single layer. Place in the oven and roast for about 20 minutes. In the last 5 minutes of roasting, brush the carrots with the reserved dressing. Remove from the oven and crumble the feta cheese over the warm carrots.

Serve immediately.
