#SCGS Pulled Pork with Mango Salsa
Ingredients
2 Tbsp Seven Colours Grill SeasoningTM
1 tsp crushed Garlic
Salt and pepper to taste
1 Pork fillet
1 Red onion
1 cube Vegetable stock dissolved in 1 cup boiling Water
½ cup Worcestershire Sauce
¼ cup Tomato Sauce
½ cup Barbeque Sauce
1 Mango, cubed
½ Red pepper, cubed
½ Green pepper, cubed
½ Cucumber, cubed
½ Lemon
Store-bought Taco shells
Method
Pre-heat the oven to 180˚C.
Combine the Seven Colours Grill SeasoningTM, garlic, salt and pepper. Rub the pork fillet with this mixture.
Slice the onion and place the rings in an oven-safe dish. Place the pork fillet on top.
Pour in the vegetable stock.
Add the Worcestershire sauce, tomato sauce and barbeque sauce and mix to combine. Bake until the meat falls apart, about 3 hours.
To make the salsa, put the mango, red pepper, green pepper and cucumber in a dish and lightly season with a pinch of salt and a squeeze of lemon.
To make the tacos, fill a shell with pulled pork and top with mango salsa.
TIP: Add your favourite hot sauce for a kick.
