Ingredients

1 Onion, finely chopped
2 cups Spinach, chopped
2 Tbsp Seven Colours Grill Seasoning™
½ tsp Paprika
4 Potatoes, parboiled
1 cup Cheese
35 g Butter
3 ½ Tbsp Flour
1 cup Milk

Method

Preheat the oven to 180°C and grease a shallow ovenproof dish. In a large saucepan, sauté the onion till translucent then add the spinach.
Cover the pan and cook on medium heat until the leaves are just wilted. Season with Seven Colours Grill Seasoning™ and paprika and mix well.
Slice the boiled potatoes as thinly as possible and place half the amount in the greased dish.
Spread the spinach mixture over the potatoes, then layer the remaining potatoes on top.
In a saucepan, melt butter, mix in flour and cook gently on low heat for a minute. Add the milk and stir until it thickens.
Stir in the half of the cheese and let it melt. Pour this over the potatoes.
Sprinkle the remaining cheese over the sauce and bake in the oven for about 20 minutes until golden brown on top.
