#SCGS Pork Tacos

Ingredients
2 Pork tenderloins, cut into small bite-sized piece
Salt, to taste
Pepper, as needed
4 Tbsp Oil
1 Onion, finely diced
1 ½ Tbsp Garlic, finely chopped
2 Tbsp Brown sugar
2 tsp Oregano
2 Tbsp Seven Colours Grill Seasoning™
1 Tbsp Cumin
½ cup Orange juice
Juice of 2 Limes
2-3 small Taco shells
1 Avocado, diced
20 g Feta, crumbled
2 Tbsp Chilli oil
Handful parsley, minced
Method
Season the pork with salt and pepper, set aside.
Heat oil in a pan over medium-high heat. Add diced onions to the heated oil and cook for 2 minutes. Stir in garlic and cook for 15 seconds or just until fragrant.
Add the pork to the pan with the brown sugar, oregano, Seven Colours Grill Seasoning™ and cumin.
Cook, stirring frequently, for about 10 minutes or until pork is cooked through.
Add the orange juice, continue to stir and scrape up the browned bits from the bottom of the pan.
Add lime juice and continue to cook for 2 more minutes. Remove from heat. Taste for salt and pepper and adjust accordingly.
Place pork mixture in taco shells then top with avocado and feta then drizzle chilli oil and garnish with parsley.
Tip: Can be served as burritos in soft tortillas, or over rice.
