Ingredients

1 kg Pork belly
2 Tbsp Seven Colours Grill Seasoning™️
½ tsp Salt
½ tsp Pepper
½ tsp Red chilli, de-seeded and finely chopped
½ tsp Thyme, dried
Kitchen twine
½ cup BBQ sauce

Method

Preheat oven to 200°C. Place meat on chopping board with the fat side facing down and pat dry. In a bowl, mix Seven Colours Grill Seasoning™️, salt, pepper, chilli and thyme. Rub mixture onto the meat with your hands. Roll meat and tie with kitchen twine. Transfer to a roasting dish and roast for 45 to 60 minutes until the fat side is golden and crackling has formed. Remove from the oven, baste with BBQ sauce and roast in the oven for a further 5 minutes. Remove from the oven and allow to rest for a few minutes before carving.
TIP: Best served with mashed butternut.
