#SCGS Panko Chicken & Bacon Waffles
Ingredients
2 cups Flour
3 Tbsp Seven Colours Grill SeasoningTM
2 Eggs
¼ cup Hot sauce
1 cup Panko bread crumbs
2-4 Chicken breast fillets, cut into halves
2 cups Oil
¾ cup Sugar
1 Tbsp Baking powder
3 Large eggs (separated)
1 ½ cups Milk
1 cup Unsalted butter (melted)
6 Bacon strips, cooked and chopped
1 cup Cheddar cheese, grated
Pinch of dry chives
Method
Mix 1 cup of flour and 2 Tbsp Seven Colours Grill SeasoningTM in a bowl. In a second bowl, mix eggs with hot sauce, and lastly, place the panko bread crumbs in a third bowl.
Dip the chicken fillets in the egg mixture first, then dip in the flour, and finally press the chicken into the panko breadcrumbs to coat thoroughly.
Heat oil in the pan over medium-high heat.
Add two breast fillets at a time and cook 3 minutes per side or until golden brown.
For the waffles, preheat your waffle maker machine.
In a large bowl, whisk the flour, sugar, Seven Colours Grill SeasoningTM and baking powder. Set aside.
In another bowl, whisk the egg yolks, milk, and butter. Set aside.
In a large bowl, use a hand mixer to whip the egg whites to soft peaks.
Add the wet ingredients to the dry, and mix until they are almost combined. Add the egg whites, bacon, cheese, and dry chives to the bowl, and gently fold them in until combined.
Portion the batter into your waffle machine, and cook for about 5 minutes, until golden brown.
When the waffle has finished cooking, place directly on the wire rack. Finish cooking the remaining waffles. Place chicken on top of waffles and enjoy.
