#SCGS Lamb Waffle Burger
Ingredients – Waffles
2 cups plain Flour
1½ Tbsp Baking powder
1 Tbsp Seven Colours Grill SeasoningTM
1 tsp Pepper
2 large Eggs
½ cup unsalted Butter, melted
1 ½ cup Buttermilk
½ cup frozen Corn, thawed and minced
Ingredients – Lamb Patties
250 g lamb Mince
1 Egg
1 Tbsp Seven Colours Grill SeasoningTM
1 Tbsp Paprika
1 tsp Pepper
1 tsp Oil
2 Cheese slices (mozzarella/cheddar)
Half an onion, sliced into rings
1 Tbsp brown Sugar
1 tsp balsamic Vinegar
3 Tbsp Cream cheese
Handful of wild Rocket
3 Bacon strips, cooked
Method
Preheat the waffle maker.
Mix together all the ingredients for the waffles.
Portion the batter into the waffle maker with a cup, and cook for about 5 minutes, until golden brown, and set aside.
Place the mince, egg, Seven Colours Grill SeasoningTM, paprika and pepper in a bowl and mix until everything is fully combined.
Form a round ball with the mince then flatten it to create a burger patty.
Heat a pan, add oil and sear the patty for 4 minutes per side.
Place cheese on top until it melts, then remove from the heat.
Fry onion rings in sugar and balsamic vinegar and set aside.
Spread cream cheese on the waffle.
Place the rocket on top then stack the burger patty with the cheese side facing up. Top with the bacon and onions and finish off with another waffle.
Tip: Instead of using waffles, you can use normal burger buns. Serve with fries and onion rings.
