#SCGS Lamb Mince Enchilada
Ingredients
2 Tbsp Oil
1 kg Lamb mince
1 medium Onion, chopped
1 cup Mushrooms, sliced
1 Tbsp Garlic, crushed
1 cube Beef stock, crushed
1 can Tomatoes, peeled and chopped
2 Tbsp Seven Colours Grill Seasoning™️
1 cup Frozen mixed vegetables
6 Tortillas
1 cup Mozzarella cheese, grated
Method
Preheat oven to 180°C. Heat oil in a pan. Brown mince and set aside. Add a splash of oil to the same pan and fry onions and mushrooms until onions are translucent. Add garlic and stock and stir. Add tomatoes and Seven Colours Grill Seasoning™️ and stir. Now add cooked mince and combine well. Add frozen veggies. Allow to simmer for 10 minutes and remove from heat. Use a Spring Form pan to layer the tortillas. Place one tortilla at the bottom of the pan. Spread 2 Tbsp of the saucy mince over the tortilla, then add another tortilla and continue in this fashion until the tortillas are finished. End with a final mince layer and top with grated cheese. Bake for 20 minutes or until cheese has melted and browned.
TIP: Mince can be substituted with vegetables or chicken.
