#SCGS Chicken & Sun-dried Tomato Espetada
Ingredients
1 Kg Deboned chicken thighs
2 Tbsp Oil
2 Tbsp Seven Colours Grill Seasoning™️
1 tsp Onion powder
1 tsp Ginger
2 Tbsp Tomato paste
1 tsp Chilli flakes
1 Lemon, squeezed
Salt & pepper for seasoning
Cling Wrap
Wooden skewers
1 cup Sun-dried tomatoes
Method
In a bowl, drizzle chicken with oil. Add Seven Colours Grill Seasoning™️ and onion powder and mix well. Add ginger, tomato paste, chilli, and lemon juice. Season with salt and pepper. Cover with Cling Wrap and refrigerate overnight. Preheat oven to 180°C. Thread chicken and sun-dried tomatoes onto wooden skewers. Remember to soak wooden skewers in cold water to prevent burning. Bake for 20 minutes or until fully cooked. Remove from oven and transfer to serving platter.
