#SCGS Chicken Sandwich with Pineapple Salsa
Ingredients – Chicken
2 Chicken fillets
1 Tbsp Seven Colours Grill Seasoning™
Pinch of Black pepper
1 Tbsp Olive oil
1 tsp Butter
Bread/buns
Ingredients – Salsa
1 cup peeled and diced Pineapple
½ cup diced Cucumber
1 cup diced Tomato
½ cup diced Red onion
1 handful Fresh coriander, chopped
2 Tbsp Olive oil
1 Tbsp freshly squeezed Lemon juice
Ingredients – Sauce
1/3 cup Mayonnaise
1 Tbsp Seven Colours Grill Seasoning™
½ cup Chilli sauce
Method
Season the fillets with Seven Colours Grill Seasoning™ and black pepper. In a pan, heat the oil and fry the fillets until cooked and golden brown on both sides. Set aside. In the same pan, melt the butter Cut and fry Bread/ bun until golden brown on both sides and set aside. To make the salsa, place the diced vegetables in a bowl. Add the olive oil and lemon juice and mix everything together. To make the sauce, put all the ingredients into a bowl and mix until well combined. To assemble the sandwiches, spread the sauce on the bread/buns, place a chicken fillet on top of the sauce and top with some of the salsa.
Tip: You can add a slice of melted cheese to your sandwich.
