#SCGS Cheesy Loaded Potatoes With Chicken

Ingredients

Ingredients:
4 Large Potatoes, peeled and diced
1 Tbsp Oil
2 Tbsp Seven Colours Grill Seasoning™
2 tsp Paprika
1 tsp Black pepper
1 tsp Mixed herbs
1 tsp Chilli flakes
3 Chicken fillets
6 Tbsp Butter
ÂĽ cup All-purpose flour
½ cup Milk
1 tsp Salt
3 Bacon strips, diced and fried
ÂĽ cup Cheddar cheese, grated
ÂĽ cup Mozzarella cheese, grated
1 tsp Fresh parsley, chopped


Method

In a large bowl, drizzle potatoes with oil. Season with 1 Tbsp Seven Colours Grill Seasoning™, 1 tsp paprika, black pepper, mixed herbs and chilli flakes. Mix until evenly coated. Transfer to an air fryer and roast for 20-25 minutes.

Season the chicken fillets with the remaining Seven Colours Grill SeasoningTM and paprika. Pan-fry with 1 Tbsp butter for 5 minutes. Remove and set aside.

For the béchamel sauce, melt butter in a large pan over medium heat. Add flour and whisk into the melted butter until smooth. Cook and stir for about 7 minutes until flour turns a light golden colour. Increase heat to medium-high and slowly whisk in milk until it thickens. Reduce heat to medium-low and bring to a gentle simmer. Continue simmering for about 10 minutes until the flour has softened. Season to taste with salt.

In a pan, over medium heat, add roasted potatoes, fried chicken and fried bacon bits. Pour the béchamel sauce over this, sprinkle with grated cheese and cover with a lid for 2-3 minutes or until the cheese has melted. Garnish with parsley.
