#SCGS Baked Rice & Peppadew Loaf

Ingredients

15 ml Olive oil
2 large Onions, sliced
2 cloves Garlic, roughly chopped 
1 Tbsp Dried Italian herbs
2 Tbsp Seven Colours Grill Seasoning™
1 cup cooked Rice 
150 g Spinach, roughly chopped 
½ cup chopped Peppadews 
4 Eggs
150 g Mozzarella cheese, grated

Method

Preheat the oven to 200˚C. Grease a loaf tin. In a pan, heat oil on low heat, then add onion, garlic, Italian herbs and Seven Colours Grill Seasoning™, stirring occasionally until caramelised. Add rice and spinach and cook until the spinach is wilted, then remove from heat and add the Peppadews. In a separate bowl, whisk eggs, then pour them into the onion mixture. Add cheese. Pour mixture into the greased loaf tin and bake for 45 minutes. Remove from oven and allow to cool before slicing.
Tip: Spread with butter when serving.
