#SCGS Bacon Broccoli Mac & Cheese

Ingredients

500 g Macaroni
1 Broccoli head (cut in florets)
1 pack streaky Bacon strips, diced
2 Tbsp Butter
¼ cup Flour
2 cups Milk
1 Tbsp Seven Colours Grill Seasoning™
½ tsp Mustard powder
Pinch of Nutmeg
½ tsp Salt
¼ tsp White pepper
1 ½ cup Mozzarella cheese, grated
1 ½ cup Cheddar, grated
Cooking spray


Method

Cook pasta according to the package instructions.
Cook broccoli in boiling water for 2 minutes, then place in ice water. Drain and set aside.
Preheat the oven to 160 degrees Celsius.
Cook bacon until crispy, cool and chop into pieces.
Add butter to the rendered bacon fat. Once the butter has melted, add flour and stir for about a minute.
Add milk, whisk, then lower the heat. Whisk until the sauce has thickened to a creamy consistency.
Add Seven Colours Grill Seasoning™, mustard powder, nutmeg, salt and white pepper.
Whisk until everything is combined.
In a separate bowl, mix the mozzarella and cheddar cheese. Add 1 cup of the mixed cheese to the sauce. Whisk until the cheese has melted and remove from heat.
Add cooked macaroni, broccoli and bacon and mix into the sauce.
Spray an ovenproof dish and add the macaroni mixture. Top with the remaining cheese.
Bake in the oven for about 10 minutes.

Serve with SCGS Salmon in honey and Garlic.
