Ingredients – Fillet

300 g Beef fillet
2 Tbsp Olive oil
3 Tbsp Seven Colours Grill SeasoningTM
1 Tbsp Black pepper
Oil for searing

Ingredients – Stuffing

2 cups chopped fresh Spinach
½ cup Walnuts
2 Tbsp chopped Garlic
¼ cup chopped fresh Mint
¼ cup chopped Italian parsley
zest of 2 Lemons
1 cup Feta cheese

Method

Preheat oven to 200 °C.
Blanch the spinach until it wilts and set aside.
Spread the walnuts on a baking pan and toast for 10 minutes, then transfer into a food processor and pulse. Remove and put in a bowl.
Put the garlic, mint and parsley into a food processor and pulse. Add to the walnuts in the bowl.
Add the lemon zest. Crumble over the feta cheese and toss together. Add the blanched spinach.
Drizzle the fillet with olive oil and season it with Seven Colours Grill SeasoningTM and pepper.
Spread the stuffing evenly over the meat, then roll it up and tie it with kitchen twine.
Splash some oil into a pan and heat it, then brown the fillet on both sides.
Transfer it into a roasting dish and cover with tinfoil. Roast for 1 hour 30 minutes. Remove the tinfoil and roast for a further 30 minutes for browning.
