Ingredients – Potatoes

6 medium Sweet potatoes, washed
2 Tbsp Olive oil
60ml Honey
2 Tbsp Seven Colours Grill Seasoning™

Method – Potatoes

For the potatoes, preheat oven to 180˚C. Place sweet potatoes on a baking paper-lined tray. Brush with oil and bake until soft. Remove from the oven, drizzle with honey and sprinkle with Seven Colours Grill Seasoning™. Bake for another 15 minutes or until golden.

Ingredients – Filling

1 Tbsp Olive oil
1 small Red onion, finely chopped 
½ cup Streaky bacon, chopped
1 Tbsp Seven Colours Grill Seasoning™
½ cup Feta cheese, crumbled
½ cup Plain yoghurt 
60ml Honey
1 cup Rocket leaves, roughly chopped

Method – Filling

For the filling, heat oil and fry onion and bacon. Remove from heat and allow to cool. Add Seven Colours Grill Seasoning™, feta, yoghurt, honey and rocket leaves and stir to combine. 
Cut a slit into each sweet potato, then stuff with the feta filling. Drizzle with honey and serve.
