Ingredients

2 Tbsp Oil 
300 g Shrimp, deveined 
2 Tbsp Seven Colours Grill Seasoning™️
1 medium Lemon, squeezed
40 g Rocket 
½ cup Red Onion, finely chopped 
1 large Avocado, cubed 
30 ml Almonds, toasted
30 ml Extra Virgin Olive Oil 
½ lemon, juiced 
10 ml Apple cider vinegar 
1 pinch Salt and pepper

Method

Heat oil in a pan and sear shrimp on both sides. Add Seven Colours Grill Seasoning™️.
Squeeze the lemon over the shrimp, remove from heat and allow to cool. Place rocket in a salad bowl, add shrimp, onion, avocado and almonds. Gently mix. In a jug, mix oil, lemon juice, vinegar, salt and pepper to create a dressing. Dress salad just before serving. 
TIP: To prevent avocado from turning brown, squeeze some lemon over it.
