1 large Butternut, cubed
1 Tbsp Oil 
2 Tbsp Seven Colours Grill Seasoning™️
½ cup Rosa tomatoes 
200 g Rocket 
1/3 cup Feta cheese, cubed
1/3 cup Black olives, pitted and halved 
½ Red onion, thinly sliced
2 Tbsp Pumpkin seeds, toasted 
½ cup Extra virgin olive oil 
1/3 cup Balsamic vinegar 
½ tsp Black pepper


Preheat oven to 180°C. Place butternut in an oven-proof dish, drizzle with oil, add Seven Colours Grill Seasoning™️ and mix well. Roast until butternut is just tender. Throw in tomatoes and roast until the skins break. Remove from oven and allow to cool completely. Place rocket leaves on a platter, scatter with cooled butternut and tomatoes, and top with feta, olives, onion, and pumpkin seeds. Mix olive oil, vinegar and pepper in a separate container and pour the vinaigrette dressing over the salad just before serving.
