Ingredients

2 cups Mixed vegetables (carrot, sweet potato, baby marrow) 
1 handful Green beans
½ Tbsp Ghee or butter
1 Tbsp Seven Colours Grill Seasoning™ 
1 Tortilla wrap
1 Tbsp mayonnaise 
3 Tbsp mozzarella, grated 
1 pinch Black pepper

Method

Cut vegetables into julienne strips and set aside. Melt ghee/butter in a pan. Add veggies and Seven Colours Grill Seasoning™ and stir fry. Be careful not to overcook veggies. Heat a griddle skillet (this will create beautiful, charred lines on your tortilla). Place tortilla on board. Spread mayonnaise on edges with back of spoon. Add veggies and top with cheese and pepper. Fold right side towards the middle. Do same with left. Roll the bottom of the tortilla up tightly towards the top. Fold the remaining top. Place each side on griddle very briefly. Remove and serve.
TIP: You can use this same method with any filling of your choice. Tortillas can be pre-prepared and served later, just wrap them in foil.
