Ingredients

2 cups Couscous
2 Tbsp Salted butter
2 Tbsp Seven Colours Grill Seasoning™
3 cups Water, boiled
1/2 cup Red onion, diced
1/4 cup Fresh coriander & parsley, chopped
1 Tbsp Chia seeds
1 cup red, yellow & green peppers, diced
1 cup Sweetcorn
1/2 cup Cucumber, diced
4 Tbsp Fresh lime juice
1 cup Plain yoghurt
1 tsp Black pepper

Method

Pour couscous into a bowl then add butter. In a separate bowl, mix water with Seven Colours Grill Seasoning™️ then pour the mixture onto the couscous and gently stir with a fork until the water is completely absorbed. Add onions, coriander, parsley, chia seeds, peppers, sweetcorn and cucumber. In a bowl, mix plain yoghurt, Seven Colours Grill Seasoning™️, lime juice and black pepper. Pour the dressing over salad and either serve immediately or store in the fridge and serve cold.

* Mash’s notes For the couscous salad, instead of water with stock to make the couscous, I will mix it with SCGS, so the dominant flavour will be that of SCGS. I will also use SCGS  for the dressing that you serve the salad with, where I’ll mix the yoghurt/mayo with SCGS, black pepper & lime juice.
The veggies are just extras, especially coz it’s a vegetarian dish, I wouldn’t want to serve plain couscous.
