Ingredients – Nachos

2 Tbsp Oil
1 medium Onion, diced
2 Garlic cloves, minced
60 g Tomato paste
4 Chicken fillets, cooked and shredded
1 cup Canned tomatoes
1 Tbsp Seven Colours Grill Seasoning™
185 g Nachos
1 cup Mozzarella cheese, grated
1 cup Cheddar cheese, grated
1 handful Spring onion, chopped

Method – Nachos

Preheat the oven to 180°C. In a pan, heat the oil and sauté the onion and garlic. Add tomato paste and chicken and mix. Add canned tomatoes and Seven Colours Grill Seasoning™. Simmer for 3 minutes then allow to cool. 
Line a flat casserole dish with the nachos and add a layer of chicken mixture, followed by another layer of nachos, and a final layer of chicken. Sprinkle the mozzarella and cheddar cheese on top. Place in the oven for 6 minutes or until the cheese has melted. Garnish with spring onion and guacamole.

Ingredients – Guacamole

1 Ripe avocado
½ tsp Lemon juice
100 ml Cream cheese
1 tsp Seven Colours Grill Seasoning™

Method – Guacamole

In a bowl, mash the avocado, then add the lemon juice, cream cheese and Seven Colours Grill Seasoning™ and mix to a relatively smooth consistency.
